Asian Cauliflower Rice (Changed - Rascal Flatts)

This post is inspired by the concept of Musical Nutrition and the song, "Changed", by the Rascal Flatts.

As a child, I was very disorganized, not only with my personal belongings, but emotionally as well. There was a lot of chaos going on inside my head. What I’ve come to realize is that when your emotions are in turmoil, it often coincides with organization in your home, work, finances, and just about everything else.

I remember a time when I was dating my husband, John. John is extremely organized. He always knows how much money he has, down to the penny, and is very organized with his personal surroundings as well. I remember the time we were taking our first vacation together to Mexico. I had only flown once before, and I was very nervous travelling with someone so experienced with flying. I recall fumbling through my purse to find my license while John was watching me and getting a bit impatient. And it was rightly so, considering I couldn’t remember which pocket of my very messy purse my license was in. This resulted in embarrassment, and I swore from that day that I would strive to get more organized.

After that trip, I thought, perhaps if I spent a little more time managing my time, my life would become much easier. However, I really felt the need to reflect on why I was so disorganized in the first place because it would be the only way I could learn why I was doing the things I was doing and living such a messy life. So, I began to explore what was holding me back from a lot of issues in my life, and this led me toward the life I really wanted.

The first step in organizing my life was to make decisions based on what I wanted and visualize where I would wind up. For example, visualizing going to the airport with a neatly packed suitcase, a cleaned out purse and organzied wallet encouraged me to have everything easily accessible so I wouldn't hold up the line and would enjoy a stress free experience instead. Now I know this example may seem petty to some, but for me it was the first step in transforming my chaotic life into one that was easy and carefree!

What I realized was that my negative patterns were holding me back in many areas of my life. These patterns included disorganization, losing things, absentmindedness, poor decision making, and poor money mismanagement to name a few. So, I made the decision to improve my life one small step at a time. For example, I made changes in areas of finance and made sure that my filing system was in order so that I was able to find important documents at any given notice. AND, what I noticed was that my life had more joy in it as I became more self confident. The self esteem I achieved from one small change at a time helped me feel I had control over most outcomes in my life! After making these changes, I saw that my life was less overwhelming, and now it’s exactly how I want my life to be.

Recipe of the Day: Asian Cauliflower Rice



INGREDIENTS

  • 4 cups of Cauliflower Rice

  • 1 Tbsp of Vegetable Oil

  • 1/2 Yellow Onion, minced

  • 1 Tbsp of Chopped Ginger

  • 2/3 cup of Frozen Peas and Carrots

  • 2 Eggs

  • 2 Tbsp of Soy Sauce

  • 1 Tbsp of Teriyaki or Oyster Sauce

  • 1/4 tsp of Sesame Oil

  • Chopped Scallions

INSTRUCTIONS

  1. In a large skillet, add the oil and allow it to preheat. Then, add in the onion and ginger, cooking for about a minute. Add the peas and carrots, and cook for about 2 minutes. Then remove from the pan with a slotted spoon and set aside.

  2. In the same skillet (add a bit more oil if necessary), add the eggs and cook them while scrambling with a wooden spoon. Remove to a plate and set aside.

  3. Add the cauliflower rice to the skillet, cook for 2 minutes, and add all of the remaining ingredients (except for the scallions) to cook for an additional minute. Remove from the pan and sprinkle some chopped scallions on top!.
