Baked Apples

This recipe is inspired by the Social dimension of wellness.


Social wellness is about relating . It's about attracting and maintaining long-lasting relationships. Further, it involves building healthy, nurturing, and supportive relationships as well as fostering a genuine connection with those around you by taking the time to listen and learn from others.


A large part of social wellness is about maintaining long-lasting relationships. Personally, I’ve been lucky enough to have found my wonderful husband who also believes we are in this for the long run. In this post, I share the story of how we met.

About 15 years ago, I was single and not very interested in dating. My brother talked me into going on Match.com. Rather resistant, I decided to take the leap and write a profile. So, I looked up all the women in my area and read their profiles; after all, I’m in sales and wanted to see my competition! But what I found in each profile was the same story line. “I can go from that little black dress in five minutes,” or “I love to go for walks in the rain...”


Seriously!!! Who the hell likes walking in the rain, especially with someone you just met? Sounds like a very bad hair day (even worse than Covid hair) but that’s for another post. Anyway, I decided to poke fun of the whole Match.com thing and change things up a bit. My profile, which contained no photo, read like this:


I live in a small trailer with 6 kids, smoke 10 packs of cigarettes a day, I love my two dogs so much I would breast feed them (that was somewhat true), I am pregnant and I don’t know who the father is (not true), and I am looking for someone to glom onto and suck the life out of (up for debate)...

“If she’s an apple and you’re an orange, celebrate your differences. Make a fruit salad. Love isn’t about being the same; it’s about being sweet to each other.”

Although I kissed a few frogs along the way after posting my crazy profile, the best man I met is now my husband. We are very different in some aspects, but at the core, we are very similar. He is a type A personality and I am a mix of the entire alphabet, depending on the day. He puts up with me, and I put up with him, but most importantly, we are committed to making our marriage work - something I never took so seriously before.


Recipe of the Day: Baked Apples


INGREDIENTS

  • 4 good-quality apples (I like to use red apples, but baking apples, such as Granny Smith, work great to!)

  • 1/4 cup chopped walnuts or pecans

  • 1/4 cup light brown sugar , packed Stevia works great too

  • 2 Tbsp butter , room temperature

  • 1/2 tsp ground cinnamon

  • 1/4 cup water

  • Optional: Ice cream for topping


INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Use a paring knife or apple corer to remove the stem and seeds from the apples, making a deep hole where the filling will go. 

  2. Combine the brown sugar, butter and cinnamon in a small bowl and mix well to combine. Add the nuts. Spoon mixture evenly into each of the apples. 

  3. Add 1/4 cup of water to a baking dish and place apples on top.

  4. Bake for about 40-45 minutes, or until apples are tender when pierced with a fork. Remove from oven and allow to cool for a few minutes. 

  5. Spoon the sauce drippings from the pan over the apples. Serve with ice cream, if desired.
