Chicken Salad

This recipe is inspired by the Spiritual dimension of wellness.


Spiritual wellness is about being. It means taking the time to stop and take in your surroundings. Notice the flowers, smells, and colors of nature. Realize there is a power greater than yourself, whether it's through nature, religion, both, or something entirely opposite. Regardless of how you practice spirituality, doing it every day leads to a better well-being. Food is one of the greatest gifts we have, especially if it’s shared with each other, as it can be a major spiritual experience.

Something my parents taught me early on was the power of having a spiritual walk with God, as it can help you find meaning through difficult times. Having a spiritual practice teaches us to strive towards being a better person. Having faith in something greater than ourselves can give us hope in hopeless situations. It helps us realize, through the human experience of falling down, that we are all in this together.

“Your body is a temple, a gift from God. You will be blessed as you care for it.”

It has been proven that a daily practice through prayer and meditation can reduce stress and help you feel more at peace. A spiritual practice can even alleviate health problems related to depression, cancer, diabetes, and chronic pain. And, it encourages us to be better individuals while motivating us to eat healthier foods. Most importantly, implementing a daily spiritual practice can greatly enhance your life by encouraging you to live your best life!


Recipe of the Day: Chicken Salad


INGREDIENTS

  • 2 large boneless ,skinless chicken breasts cooked in lightly salted water then chilled in the fridge and diced, about 4 cups (for the best texture, avoid canned chicken) or roast a whole chicken which is best for flavor!

  • 1 cup chopped celery

  • 1 1/2 cups halved seedless red grapes

  • 3 green onions ,chopped

  • 1 cup mayonnaise (for a healthier choice use Avocado Oil Mayonnaise)

  • 1/2 cup sour cream

  • 1 Tbsp lemon juice

  • 1 tsp prepared yellow mustard

  • 2 Tbsp chopped fresh parsley

  • 1/2 tsp dried dill weed

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 2 tsp sugar

  • 1 tsp salt

  • 1/2 tsp freshly ground black pepper


INSTRUCTIONS

  1. Place the diced chicken, celery, green onions and grapes in a large mixing bowl and stir to combine.

  2. In a medium-sized bowl, add the remaining ingredients to make the sauce and stir to combine. Pour the mayo sauce over the chicken salad and stir to combine and thoroughly coat the salad.

  3. Cover and chill in the fridge for at least 4 hours before serving.

  4. Serve on sandwiches, croissants or in wraps with some lettuce. For a low-carb option, serve on a bed of lettuce with sliced tomato and avocado.
