This recipe is inspired by the Nutritional dimension of wellness.
Nutritional wellness is about eating foods that are high quality and lower in calories. It’s important to eat foods that are enjoyable and healthy at the same time as it allows you to have a better relationship with food. The key to this dimension is to eat in a balanced manner without feeling deprived.
“Cauliflower is nothing but cabbage with a college education.” - Mark Twain
We all know that eating vegetables is good for you, but in reality, it’s not always easy to get people to eat them. Cauliflower is a great vegetable to experiment with as there are literally hundreds of ways to cook with them. Plus, preparing your favorite comfort foods by replacing certain ingredients with vegetables is a great way to stay fit and trick your brain into thinking you’re eating something decadent; we eat with our eyes just as much as our stomachs! It’s important to keep this in mind when drafting your recipes so that you can feel less deprived while increasing your vegetable intake. This recipe is loved by all… trust me!
Recipe of the Day: Loaded Cauliflower
INGREDIENTS

1 large head cauliflower, cut into small florets
4 oz cream cheese, softened
2/3 cup sour cream
1 1/2 cup Cheddar cheese, shredded
6 strips bacon, cooked and chopped
1/4 cup green onion, finely chopped
1 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
INSTRUCTIONS
Preheat the oven to 350 degrees Fahrenheit. Prepare a small casserole dish with non-stick spray.
In a steamer insert over boiling water, steam the cauliflower florets for 5 minutes, until crisp-tender. (You can also blanch the cauliflower in boiling water for 4-5 minutes.) Remove from heat, and drain if necessary to remove excess water.
Meanwhile, in a large mixing bowl, stir together the sour cream and cream cheese, until smooth. Stir in the shredded cheese, chopped bacon, green onion, salt, pepper, and garlic powder. Add the cauliflower florets to the bowl and mix with the sauce.
Pour the cauliflower mixture into the casserole dish. Bake for 15-20 minutes, until the cheese melts and the sauce is bubbly. Enjoy!
