Low-Carb Garlic Bread

Spiritual wellness is about being. It means taking the time to stop and take in your surroundings. Notice the flowers, smells, and colors of nature. Realize there is a power greater than yourself, whether it's through nature, religion, both, or something entirely opposite. Regardless of how you practice spirituality, doing it every day leads to a better well-being.

As I age, I’ve come to realize that diet and exercise aren’t the only keys to feeling good about ourselves. It’s equally important to help others. For example, volunteering is a great way to give back and has been known to decrease stress. By interacting with new people and donating our time to help others, we increase our appreciation for oneself. Volunteering also helps us manage our time and priorities while increasing our confidence and expanding our connections.


Many of us have rather blessed lives while living in comfortable homes and safe neighborhoods. However, the reality is that there are many less fortunate. Not only do many have limited resources, but also some are very lonely people and could use some lifting up. The experience of volunteering can really open your eyes to others' misfortunes - all of a sudden, you realize that worrying about what to wear to a party becomes trivial. So give back; it’s good for you!


Recipe of the Day: Low-Carb Garlic Bread


INGREDIENTS Makes 3 Servings

  • 1 cup shredded mozzarella

  • 1/2 cup finely ground almond flour

  • 2 Tbsp cream cheese

  • 1 Tbsp garlic powder

  • 1 tsp baking powder

  • 1/4 tsp salt (optional) 

  • 1 large egg 

  • 1 Tbsp butter, melted

  • 1 clove garlic, minced

  • 1 Tbsp freshly chopped parsley

  • 1 Tbsp freshly grated Parmesan


INSTRUCTIONS

  1. Preheat oven to 200c/400f and line a large baking sheet with parchment paper. In a medium, microwave-safe bowl, add mozzarella, almond flour, cream cheese, garlic powder, baking powder, and a pinch of salt (optional). Microwave on high until cheeses are melted, about 1 minute. Stir in egg. 

  2. Shape dough into a ½”-thick oval on baking sheet. 

  3. In a small bowl, mix melted butter with garlic, parsley, and Parmesan. Spoon mixture over top of bread.

  4. Bake until golden, 15 to 17 minutes. Slice and serve with marinara sauce for dipping.
